Bite-Sized Soft Pretzel Delights


Ingredients:

1 1/2 cups warm water (110°F)
1 packet active dry yeast (2 1/4 teaspoons)
1 tablespoon granulated sugar
4 cups all-purpose flour
1 teaspoon salt
2/3 cup baking soda
10 cups water
2 tablespoons melted butter
Coarse salt, for sprinkling
Directions:

In a large bowl, mix warm water, yeast, and sugar. Let sit for 5 minutes until the mixture is foamy.
Add flour and salt, mixing until the dough is smooth and pulls away from the bowl. Knead the dough for about 5 minutes on a floured surface, then let it rest for 10 minutes.
Preheat the oven to 450°F (232°C). Line two baking sheets with parchment paper.
In a large pot, bring 10 cups of water and baking soda to a boil.
Cut the dough into 6 sections, then roll each section into a 12-inch rope. Cut each rope into 1-inch pieces.
Working in batches, drop the dough bites into the boiling water for 30 seconds. Remove with a slotted spoon and place on the baking sheets.
Brush each piece with melted butter and sprinkle with coarse salt.
Bake for 10-12 minutes, or until golden brown. Serve warm.
