Ingredients:
For the Crust:
1 cup graham cracker crumbs
3 tablespoons sugar
1/4 cup unsalted butter, melted
For the Cheesecake Filling:
3 (8 oz) packages cream cheese, softened
3/4 cup sugar
3 large eggs
1 teaspoon vanilla extract
For the Apple Topping:
3 medium apples, peeled, cored, and thinly sliced
1/2 teaspoon ground cinnamon
1/4 cup sugar
For the Caramel Sauce:
1/2 cup caramel sauce, store-bought or homemade
Directions:
Preheat oven to 350°F (175°C). Grease a 9-inch springform pan.
In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of the prepared pan to form the crust.
In a large bowl, beat the softened cream cheese and sugar until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract. Pour the cream cheese mixture over the crust and smooth the top.
In another bowl, toss the apple slices with cinnamon and sugar until coated. Arrange the apples over the cheesecake filling in an even layer.
Bake for 50-60 minutes, or until the center is set. Allow the cheesecake to cool to room temperature, then refrigerate for at least 4 hours or overnight.
Before serving, drizzle caramel sauce over the cheesecake. Slice and enjoy!
