Cheesy Bacon and Tater Tot Breakfast Bake

Ingredients:

1 package (32 oz) frozen tater tots
1 lb bacon, cooked and crumbled
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
8 large eggs
1 cup milk
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup green onions, sliced, for garnish

Directions:

Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
Arrange the tater tots in a single layer at the bottom of the prepared baking dish.
Sprinkle the crumbled bacon over the tater tots, followed by the cheddar and Monterey Jack cheeses.
In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
Pour the egg mixture evenly over the tater tots, bacon, and cheese.
Bake in the preheated oven for 40-45 minutes, or until the eggs are set and the top is golden brown.
Garnish with sliced green onions before serving.
