Ingredients:
8 oz lo mein noodles
1 lb boneless, skinless chicken breast, thinly sliced
2 tablespoons vegetable oil, divided
1/2 cup bell pepper, thinly sliced
1/2 cup carrots, julienned
1/2 cup broccoli florets
1/4 cup soy sauce
1 tablespoon oyster sauce
1 tablespoon hoisin sauce
1 tablespoon sesame oil
1 teaspoon sugar
1/2 teaspoon ground ginger
1/2 teaspoon garlic powder
2 green onions, sliced
Directions:
Cook the lo mein noodles according to package directions. Drain and set aside.
In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the chicken slices and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, add the remaining tablespoon of vegetable oil. Add the bell pepper, carrots, and broccoli, and stir-fry until the vegetables are tender-crisp, about 3-4 minutes.
In a small bowl, whisk together soy sauce, oyster sauce, hoisin sauce, sesame oil, sugar, ground ginger, and garlic powder.
Return the chicken to the skillet along with the cooked noodles. Pour the sauce over the mixture and toss to coat evenly. Cook for an additional 2-3 minutes until everything is heated through.
Garnish with sliced green onions before serving.
