Creamy Kielbasa and Potato Soup

Ingredients:

1 tablespoon butter
1/2 large onion, chopped
1 pound kielbasa sausage, sliced
3 large potatoes, peeled and cubed
4 cups chicken broth
1/2 cup heavy cream
Salt and pepper to taste
1/4 teaspoon dried thyme
Fresh parsley, chopped, for garnish
Directions:

In a large pot, melt the butter over medium heat. Add the chopped onion and sauté until soft and translucent, about 3-5 minutes.
Add the sliced kielbasa to the pot, stirring occasionally, and cook until it begins to brown, about 4-5 minutes.
Add the cubed potatoes and chicken broth to the pot. Bring to a boil, then reduce the heat and simmer for 15-20 minutes, or until the potatoes are tender.
Stir in the heavy cream, salt, pepper, and thyme. Simmer for another 5 minutes to allow the flavors to blend.
Ladle the soup into bowls and garnish with freshly chopped parsley.
