Ingredients:
- 4 medium potatoes, peeled and shredded
- 1 small onion, grated
- 2 large eggs, beaten
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- Vegetable oil, for frying
Directions:
- Place the shredded potatoes in a clean towel and squeeze out excess moisture.
- In a large bowl, mix the potatoes, onion, eggs, flour, salt, and pepper until well combined.
- Heat about 1/4 inch of oil in a large skillet over medium-high heat.
- Drop heaping tablespoons of the potato mixture into the skillet and flatten with a spatula.
- Cook for 2-3 minutes on each side, or until golden brown and crispy.
- Drain on paper towels and serve hot.
