Ingredients:

  • 1 egg, beaten
  • 1 cup milk
  • 2 tablespoons vegetable oil
  • 2 ripe bananas, mashed

Directions:

  1. In a large bowl, mix the flour, sugar, baking powder, and salt.
  2. In a separate bowl, whisk together the egg, milk, and vegetable oil.
  3. Add the wet ingredients to the dry ingredients and stir until just combined.
  4. Fold in the mashed bananas gently to avoid overmixing.
  5. Heat a lightly oiled griddle or frying pan over medium-high heat.
  6. Pour about 1/4 cup of the batter onto the griddle for each pancake.
  7. Cook until bubbles form on the surface and the edges look set, then flip and cook the other side until golden brown.
