Ingredients:

  • 3/4 cup quick-cooking oats
  • 1 cup buttermilk
  • 1 egg
  • 1/2 cup all-purpose flour
  • 1 tablespoon white sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 tablespoons vegetable oil

Directions:

  1. In a bowl, soak the oats in the buttermilk for 5 minutes.
  2. Beat in the egg, then stir in the flour, sugar, baking powder, baking soda, and salt until just combined.
  3. Heat a lightly greased skillet or griddle over medium heat.
  4. Pour 1/4 cup of batter for each pancake onto the griddle.
  5. Cook until bubbles form on the surface, then flip and cook until golden on the other side.
