Ingredients:
1 can (14.5 oz) diced tomatoes, undrained
1 package (6 oz) Stove Top Stuffing Mix for Chicken
1/2 cup water
2 cloves garlic, minced
1 1/2 pounds boneless, skinless chicken breasts, cut into bite-sized pieces
1 tsp dried basil leaves
1 cup shredded mozzarella cheese
Salt and pepper to taste
Directions:
Preheat oven to 400°F (200°C).
In a large bowl, combine the diced tomatoes (including liquid), stuffing mix, water, and minced garlic. Stir until the stuffing mix is moistened.
In a greased 9×13-inch baking dish, arrange the chicken pieces in an even layer. Season with salt, pepper, and dried basil.
Sprinkle the shredded mozzarella cheese evenly over the chicken, then top with the prepared stuffing mixture.
Bake in the preheated oven for 30–35 minutes or until the chicken is cooked through and the top is golden brown.
