Kielbasa and Potato Bake

Ingredients:

1 pound kielbasa sausage, sliced
6 medium potatoes, cubed
1 medium onion, chopped
3 tablespoons olive oil
Salt and pepper to taste
1/2 teaspoon smoked paprika
Fresh parsley, chopped, for garnish
Directions:

Preheat the oven to 375°F (190°C).
In a large mixing bowl, combine the cubed potatoes, sliced kielbasa, and chopped onion.
Drizzle with olive oil, then season with salt, pepper, and smoked paprika. Toss until everything is evenly coated.
Spread the mixture in a single layer on a baking sheet.
Bake in the preheated oven for 40-45 minutes, stirring halfway through, until the potatoes are tender and golden brown.
Garnish with freshly chopped parsley before serving.
