Ingredients:

  • 3/4 cup milk
  • 2 large eggs
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon zest
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder

  • Butter or oil for cooking

Directions:

  1. In a bowl, whisk together the ricotta, milk, eggs, sugar, vanilla extract, and lemon zest until smooth.
  2. In a separate bowl, mix the flour, baking powder, and salt.
  3. Gradually combine the dry ingredients with the wet ingredients, stirring gently until just blended.
