Nutritious Pancakes with Juicy Blueberries and Flaxseed

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup ground flaxseed
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk (coconut, almond…)
  • 1 large egg
  • 2 tablespoons vegetable oil
  • 1/2 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries

Directions:

  1. In a large bowl, whisk together the flour, flaxseed, sugar, baking powder, and salt.
  2. In another bowl, combine the milk, egg, vegetable oil, and vanilla extract.
  3. Gradually add the wet ingredients to the dry ingredients and stir until just combined.
  4. Fold in the blueberries gently.
  5. Heat a lightly greased skillet or griddle over medium heat.
  6. Pour 1/4 cup of batter onto the griddle for each pancake.
  7. Cook until bubbles form on the surface, then flip and cook until golden on the other side.
