Ingredients:
- 1 cup all-purpose flour
- 1/2 cup ground flaxseed
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup milk (coconut, almond…)
- 1 large egg
- 2 tablespoons vegetable oil
- 1/2 teaspoon vanilla extract
- 1 cup fresh or frozen blueberries
Directions:
- In a large bowl, whisk together the flour, flaxseed, sugar, baking powder, and salt.
- In another bowl, combine the milk, egg, vegetable oil, and vanilla extract.
- Gradually add the wet ingredients to the dry ingredients and stir until just combined.
- Fold in the blueberries gently.
- Heat a lightly greased skillet or griddle over medium heat.
- Pour 1/4 cup of batter onto the griddle for each pancake.
- Cook until bubbles form on the surface, then flip and cook until golden on the other side.
