Ingredients:

  • 2 large eggs, beaten

  • 2 tablespoons olive oil

Directions:

  1. Place the grated zucchini in a clean towel and squeeze out as much moisture as possible.
  2. In a large bowl, mix the zucchini, eggs, flour, Parmesan cheese, garlic powder, salt, and pepper until combined.
  3. Heat olive oil in a large skillet over medium heat.
  4. Drop spoonfuls of the batter into the skillet and flatten into pancake shapes.
